Designed by Aristides Dallas Architects and Micromega Architecture & Strategies, with interiors by the Athens-based studio ID Laboratorium, Eréma draws directly from the island’s natural palette. Volcanic stone, marble, timber and soft earth tones replace unnecessary ornamentation, while custom-made furniture crafted by local artisans reinforces the connection to Milos’ heritage. Even the bathrooms, finished in Naxian marble, feel considered rather than decorative.

Dining from Sunrise to Sunset

Food is central to the experience at Eréma, led by Greek chef Yiannis Kioroglou, Empiria Group’s Culinary Director. His Medite-Grecian approach blends traditional Cycladic recipes with seasonal ingredients and modern techniques, creating a menu that feels rooted in place. The day begins at Halaka, the sunrise restaurant overlooking the infinity pool and Aegean Sea, serving relaxed all-day dishes such as Cycladic salad, ladenia flatbread and handmade Milos pasta.

As evening falls, Akiton takes focus, offering panoramic views alongside a refined menu that includes grilled Milos manouri cheese, scorpionfish giouvarlákia and seafood lasagna with saffron, followed by rum-infused revani. Nearby, Akiton Bar serves cocktails inspired by Greek ingredients, while Circe Bar provides a more casual setting for light bites, spritzes and smoothies throughout the day.

The same understated approach continues at Elios Spa, where the design draws on Milos’ mineral-rich landscape rather than traditional luxury spa aesthetics. Filled with natural light, it features three treatment rooms, an outdoor heated pool and quiet spaces designed for switching off after a day exploring the island. Beyond the spa, a large infinity pool overlooks the Aegean, while a light-filled fitness centre, open 24 hours a day, offers space to maintain a routine.

Sustainability has also been built into the project from the outset. Designed to achieve LEED Gold certification, Eréma incorporates energy-efficient building systems, responsibly sourced materials, native landscaping and water-conservation strategies, placing it among a growing number of luxury hotels in the Aegean designed with long-term environmental considerations in mind.
