Tao Group Hospitality Global Pastry Chef Romain Cornu, alongside LOUIS XIII Cellar Master Baptiste Loiseau, collaborated to delicately conceive an exceptional pairing. “We’re incredibly excited for the world to taste this dessert. Presenting a menu of modern and ancient, Hakkasan’s sophisticated culinary creations are thoughtfully paired with the world’s most prestigious spirits, with LOUIS XIII Cognac holding a special place in the hearts of Hakkasan’s discerning clientele.

The distinctive flavour of Louis XIII is a testament to time, the ageing process of LOUIS XIII cognac spans 40 to 100 years, and it can require the expertise of up to four generations of cellar masters to oversee the maturation of decanters before they are ready to drink.

 The Sweet Caviar Dessert Pairing is elegantly served in a traditional caviar tin, consisting of layers of passion fruit cake, poached pineapple with passion fruit marmalade, coconut bavarois, and coconut feuilletine. The dessert is adorned with coconut pearls resembling caviar. To complete the experience, a refreshing mango and passion fruit sorbet is served alongside the dish, along with a pour of LOUIS XIII Cognac.

The Sweet Caviar Dessert Pairing presents the “Sweet Caviar” dessert with a table side ritual. The impressive desserts comes presented in a glossy black box. To enhance the tasting ritual even further, a specially designed LOUIS XIII Spear is used to draw out cognac from your LOUIS XIII decanter using the lightest of touches, transferring the contents to your crystal glass.

Louis XIII Cognac X Hakkasan

The crystal glasses each flourish with a single ounce of LOUIS XIII Cognac. The glasses are finely carved with vertical grooves, and the tall-stemmed crystal glass takes its shape from the stylised form of a drop of water, allowing the complex aromas of LOUIS XIII cognac to be released. Contrary to popular belief, when tasting cognac, you should not swirl the glass or warm it in your palm. The notes just spring forth from the minute the eau de vie leaves the decanter.

The pairing is served with two mother-of-pearl spoons in an exquisite display of refined dessert. The whole experience is further presented in a captivating display of smoke, adding an element of excitement and awe to the dining experience.
