Michelin Starred Restaurants in UK and Ireland

The Green Star was introduced to the MICHELIN Guide Great Britain & Ireland in January 2021. It highlights restaurants at the forefront of the industry when it comes to their sustainable practices. These restaurants offer dining experiences that combine culinary excellence with outstanding eco-friendly commitments, and are a source of inspiration both for keen foodies and the hospitality industry as a whole.

Every Green Star restaurant is different and works in its own unique way. The Inspectors are simply looking for those at the top of their game when it comes to their sustainable practices. They consider things such as: the provenance of the ingredients; the use of seasonal produce; the restaurant’s environmental footprint; food waste systems; general waste disposal and recycling; resource management; and the communication between the team and the guests about the restaurant’s sustainable approach.

Gwendal Poullennec, International Director of the MICHELIN Guides says: “With 20 new Bib Gourmand restaurants joining the 2023 edition of the MICHELIN Guide Great Britain & Ireland, our inspectors have spotlighted establishments that stand out for their fine and generous cooking across a diverse range of styles; places that really deserve to be known by gourmets looking for good quality, good value cooking. As chefs in Great Britain & Ireland face rising day-to-day costs – from the raw ingredients they purchase to the energy they use to keep their kitchens and restaurants running – it is heartening to see many of them also finding inventive ways to create affordable menus and keep costs down for their guests, while still offering creative and exciting culinary experiences.”
