Sublimotion Debuts ‘Heritage’: Where Gastronomic Tradition Meets Tech-infused Elegance
Sublimotion, the world’s first gastronomic performance created by 2* Michelin star Chef Paco Roncero and creative director Eduardo Gonzales, has launched a new concept this season. Located in the hotel operated by Palladium Hotel Group, Hard Rock Hotel Ibiza, Sublimotion opened its doors for this season on 1 June and will remain open until 30 September 2024.
‘Heritage‘ gives name and soul to the new experiential proposal that returns to the roots of dining, with the aim of enhancing the pleasure of sharing time and food around a table. After 10 years leading the evolution of the gastro-immersive show, Sublimotion’s fresh concept will blend legacy and tradition with the latest technology in a subtle and measured way, creating a heightened level of gastronomy.
The new experience begins with a series of sharing snacks, including onion-stuffed squid prepared in different textures with an onion puree; beef tartar served with beluga caviar; and sea urchin roe with a yogurt cream flavoured with truffle and hazelnut oil.
For the main course, diners will be treated to a lobster bolognese, with a unique tomato sauce prepared using bourbon whiskey, smoked bacon and ginger. The menu concludes with a sweet ‘festival’ simulating an amusement park, made up of petit fours served in Ferris wheels; miso cupcakes; and pecan and Maldon salt brownies among other treats, using flavours reminiscent of childhood classics.
“This year, we wanted to highlight the essence of the raw produce, paying special attention to its union with the staging. Avant-garde cuisine is more present than ever, with dishes based on the raw product and technique, perfectly harmonised with each of the scenes that make up the surrounding experience,” notes Chef Paco Roncero.
To complete this unparalleled culinary proposal, Sublimotion will continue to collaborate with the Pernod Ricard group, responsible for pairing with Perrier-Jouët Belle Epoque Champagne, extending their relationship for another year.
More than a decade of work and experimentation by a multidisciplinary team has gone into the Sublimotion concept, which has continued to contribute to the transformation of the sector and continues to be a reference and inspiration across five continents. A commitment that has been maintained since its inception, the concept never fails to surprise and excite national and international audiences in a unique, differential, and constantly evolving adventure.
“Many months of work and research and continuous trial and error allows us to learn and sometimes, only sometimes, find new paths and possibilities to keep thrilling. That’s when all the effort is worth it,” says creative director Eduardo Gonzales, explaining how the concept is developed along with the entire multidisciplinary team that is part of Sublimotion.
After 11 years in this same location and several seasons in Saudi Arabia and Dubai, Sublimotion is immersed in an expansion plan and finalising openings in new international locations in the coming months.
