Inside COMO Cordeillan-Bages, The Bordeaux Château Hotel With Exclusive Access to Lynch-Bages

Set within a restored 19th-century château in Pauillac, at the heart of Bordeaux’s Médoc region, COMO Cordeillan-Bages has officially reopened following an extensive transformation, and is the brand’s second wine-focused property in France, alongside COMO Le Montrachet in Burgundy. But this isn’t simply a hotel with a good wine list, it is deeply connected to its Médoc surroundings.

Surrounded by rolling vineyards, storied wine estates and three of the region’s five Premiers Crus Classés on its doorstep, the intimate 28-room retreat places guests in one of the world’s most prestigious wine regions, where the culture of grand cru winemaking and long vineyard lunches defines daily life.

Originally established as a wine estate before opening as a hotel in 1989, the property has long been considered a landmark destination for wine tourism in Bordeaux. Now reimagined under the COMO brand in collaboration with the Cazes family, owners of the legendary Château Lynch-Bages estate, the hotel enters a new era of understated luxury, bringing together two family-owned names united by a shared philosophy of craftsmanship, discretion and timeless hospitality.

Fabien Ferré – the chef who made history

Gastronomy sits at the heart of COMO Cordeillan-Bages, and the culinary direction has been handed to Fabien Ferré, a name worth knowing if you don’t already. In 2024, Ferré became the youngest chef ever to go from zero to three Michelin stars, for his restaurant La Table du Castellet in Provence. He’s brought that precision to the Médoc, appointing Mathieu Martin, a native of southwest France, as Executive Chef.

The restaurant, Le Cordeillan, takes its cues from the season and the nearby Atlantic. Three, four, and six-sequence menus run at lunch and dinner alongside an à la carte selection, with the menu evolving every two to three months as the kitchen dictates. Standout dishes include Atlantic turbot with asparagus, shellfish and lovage, and a Gillardeau oyster served with turnip, sorrel and radish.

The wine cellar, with over 1,600 references, does exactly what you’d hope for in this region. Wines from Château Lynch-Bages take their rightful place alongside more discreet cuvées from carefully selected estates. Regional bottles remain central, but rare references are chosen for character, among them a 1961 Château Lafite Rothschild and a 2000 Montrachet Grand Cru. The sommelier team handles pairings with the kind of attention the collection deserves.

Paola Navone – reimagins a Bordeaux Château for Modern Luxury

The château’s interiors were reimagined by acclaimed Italian designer Paola Navone, who struck the right balance between contemporary clarity and respect for the building’s heritage. A restrained palette of greys, whites and metallic blues sets the tone, understated, not cold, brought to life by tactile textiles, custom furniture and lime-washed walls.

Le Cordeillan carries the same sensibility, it is flooded with daylight, soft neutral tones, tactile finishes, and monochrome ceramic centrepieces by artist Benoît Breymand that are intentionally restrained so as not to upstage the food. The vineyard-facing terrace is exactly what it sounds like, the Médoc landscape, right there. The Living Room and Bar extend the experience into something more relaxed, without losing any of the elegance.

Across the 28 rooms and suites, including two signature COMO Suites, materials reflect the quiet refinement of rural Bordeaux, woven seamlessly with COMO’s signature warmth. Wellness is handled via the brand’s award-winning COMO Shambhala philosophy, with a 25-metre heated outdoor pool, fully equipped gym, sauna, and in-room amenities.

Privileged access to Lynch-Bages and beyond

The COMO Cordeillan-Bages experience extends well beyond the château’s walls. Through the partnership with Château Lynch-Bages, guests enjoy complimentary daily group tastings and bespoke private visits (available at additional cost).
